Summary
Milk, eggs, wheat, soy, tree nuts, fish, shell fish, and peanuts are common allergens in children. To someone without a food allergy these items are harmless, but to a child who is sensitive to certain types of foods they can be scary and deadly if not moderated daily. Throughout this training, it is critical for child care providers to gain an understanding of food allergies and what they are, learn about the causes and foods that produce an allergy, as well as the symptoms, prevention measures, and treatment options. In addition, developing the proper response to emergency situations, and acquiring an understanding of severe allergic reactions, such as anaphylactic shock will help save a child’s life.
